14 - 1 bay leaf

# Directions:

01 - Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5 minutes until vegetables are softened.
02 - Add minced garlic and cook for 1 minute until fragrant.
03 - Stir in ground cumin, smoked paprika, and dried thyme. Cook for 30 seconds to bloom the spices.
04 - Add rinsed lentils, chopped tomatoes, and vegetable broth. Toss in the bay leaf and stir to combine.
05 - Bring mixture to a boil, then reduce heat to a simmer. Cover and cook for 20 minutes until lentils begin to soften.
06 - Add diced zucchini and simmer for another 10 minutes until lentils and all vegetables are tender.
07 - Stir in spinach or kale and cook for 2-3 minutes until completely wilted.
08 - Remove bay leaf. Season to taste with salt and freshly ground black pepper. Adjust consistency if needed.
09 - Ladle into bowls and serve hot. Garnish with fresh parsley and lemon wedges if desired.
